Sweet Potato Vegan Burgers

Yes, that right everyone. Another super tasty alternative to meaty burgers. I have rustled up some really simple, easy and bank friendly burgers for you that are full of flavour, made from veggies and protein filled. A mixture of whole grain rice, chickpeas and grated carrots mashed together with spices, turmeric (optional), salt and pepper.

Don't you just love it when you have created something by accident that turned out to be the best accident you've done so far? With just a few ingredients needed you now have super healthy option for the BBQ weather / time coming up here in the UK.

They are also Gluten, Dairy, Soy FREE!

Prep time - 5 minutes (30-40 minutes if you haven't prepped the sweet potatoes)

Cooking 25-35 minutes

Ingredients:
  • 2-3 Carrots (I added 4 because they were only small)
  • 2 Sweet Potatoes (depending on size)
  • 1 Tin Chickpeas (240g tin - rinsed)
  • 1/2 Cup Brown Rice (packet is fine)
  • Spices, Garlic, Salt & Pepper
  • Turmeric (optional) 

Topping Ideas - Avocado, Salsa, Salad, Hummus, Beetroot - get creative as you like



Method:
  • If needed prep the sweet potatoes in the oven (around 45 mins to cook) and leave to cool slightly
  •  Cook up the brown rice until fluffy
  •  Whist waiting for the rice and potato to cook, grate up the carrots and rinse the chickpeas.
  •  Once all is the hot ingredients are cool blend up the mixture, - we are aiming for a chunky mixture. Try not to over blend, if mixture is wet add a little bit of flour or with bread crumbs.
  •  Form into burger patties and place on a tray at 180 degrees for 15 minutes, then flip over and cook for another 10 minutes.
  •  Once they are done, remove from the oven and place in to buns and add all your extras
  •  Enjoy!
