Healthy Sweet Potato Brownies?!

Hello beautiful readers! I hope you all had an amazing weekend and reading to hit the ground running this week and still making healthy choices for your lifestyles. Now, I know many of us a re partial to a super naughty treat now and again and if any of you are like me I absolutely LOVE sweet things. Every since I can remember any sweet treats I would always demolish! But since having to take a step back and assess my lifestyle and foods I put into my body I was determined to find some healthy alternative options for treats to have now and again. I have tried so many different recipes out there, but none have really done it for me so I played around with the ingredients and found this one to be the best! They are the perfect gooey texture with all of the flavors! My recipe is Gluten, Dairy, Refined Sugar Free and Vegan (if you don't add honey - instead use Agave Syrup or anything else).
Since i follow the lifestyle of intuitive eating on a plant based 'diet' I will not deprive my body of foods and flavours that I love, but can then also give heathy alternatives to anyone who reads this blog or follows me on Instagram (inyourstridefitness) - if you wanted to give me a cheeky follow. So lets get in to it!
 

Make sure you have pre cooked the sweet potatoes - they tend to take around 45mins to cook.

The Ingredients:
 
  • 2 medium sweet potatoes
  • 1/2 cup Cacao Powder
  • 1/4 cup Coconut Oil
  • 1/4 cup Agave Syrup
  • 3 tbsp Almond Flour (or normal flour if non available)
  • 2 tbsp Maple Syrup
  • 1 tsp Vanilla Extract
  • 2 tsp Baking Powder

The Method: 
  1. Pre-heat the oven to 180 degrees.
  2. Place the ingredients into a bowl and mix well
  3. Spread the mixture into a baking tray / tin with baking paper.
  4. Bake for 20-30 minutes or until your fork / knife comes out clear (enough) you don't want them to be too over done.
  5. Remove from the oven and leave to cook before you cut them. 


E x t r a - T o p p i n g
Heat 1 tbsp of any nut butter, 1 tbsp cocoa powder and coconut oil then mix together. Make sure you wait until the brownies are cooled before you add the sauce.

Then you can enjoy, IF there are any left once you have tried them. I would suggest leaving them in an air tight container in the fridge.
